The grapes were harvested in the early morning, destemmed and lightly crushed at the winery. Fermentation occurred at warm temperatures with daily rack-and-returns and pump-overs to extract color and flavor. After fermentation, the must was pressed lightly to extract the remaining wine from the skins.

Rich and ripe, our William Hill Estate Central Coast Cabernet Sauvignon opens with notes of dark cherry, black currant and cinnamon. A balanced acidity and round tannins create a full mouthfeel and a long, pleasing finish.

The Cabernet Sauvignon is nearly 100% Cabernet Sauvignon with a bit of Cabernet Franc and Petit Verdot, aged 19 months in both French and American oak (27% new French and 10% new American). A relatively good-sized cuvée of 15,700 cases, the wine is narrowly constructed compared to the proprietary red blend. It has an opaque purple color and hits the palate with much more fruit than the somewhat more restrained and reticent aromatics suggest. The tannins are relatively supple and the wine dense, medium to full-bodied, but needing time to open up and develop additional nuances. Drink now-2028.
